Nubia Sabogal

Originally from Sevilla, Colombia – widely recognized as the “Coffee Capital of Columbia”, chef and proprietor Nubia Sabogal first fell in love with cooking at the age of 18. From that point she has had a passion for cooking and trying new flavors with a different twist. She had her first restaurant in Bogota, Colombia from 1995-2001. Since then, Nubia and Pedro Sabogal opened El Pollo Real in Albuquerque, New Mexico (2008-2014), and now Ajiaco Colombian Bistro, which is sure to be a hit, with its refined menu and sensual flavors that reflect Colombian Cuisine at its finest.
