NUBIA SABOGAL
Originally from Sevilla, Colombia – widely recognized as the “Coffee Capital of Columbia”, chef and proprietor Nubia Sabogal first fell in love with cooking at the age of 18. From that point she has had a passion for cooking and trying new flavors with a different twist. She had her first restaurant in Bogota, Colombia from 1995-2001. Since then, Nubia and Pedro Sabogal opened El Pollo Real in Albuquerque, New Mexico (2008-2014), and now Ajiaco Colombian Bistro, which is sure to be a hit, with its refined menu and sensual flavors that reflect Colombian Cuisine at its finest.
PEDRO SABOGAL
Originally from Armenia, Colombia, part of the Colombian Coffee Growing Axis, Pedro Sabogal has always been a hard working businessman. He owned his own insurance agency in Bogota, Colombia for over 30 years, that has since been passed on to his sons. During this time he also owned three successful restaurants in Colombia. Pedro looks forward sharing his strong business sense and love of Colombian Cuisine.
